Green Tomato Doubters!

To My Dearest Green-Tomato-Doubters

It is so difficult for me to believe that many of my closest people – family and friends – are Green-Tomato-Doubters.  Yes, it’s true.  (And I suspect many are anti-basket... but that's another story for another time.)

I have always liked green tomatoes. Just yesterday, I added a diced green tomato to my tuna fish – piquant with a crisp texture, similar to a pickle without the vinegar. Delicious. 

And who doesn’t love a well-made fried green tomato?

Green tomatoes are so good, my Little Guy loves to pick little cherry tomatoes while they are still green and pop them in his mouth straight from the vine!


Doubters Challenge

So, if you are brave enough to give it a try – yes, that’s a challenge – here is my take on a green tomato cobbler.  I’ve adapted two recipes, Fanny Farmer’s Cream Scones and Drum Beets' Savory Green Tomato Cobbler, to create this beauty!

Recipe: Doubters Green Tomato Surprise

Pie Filling
3lbs or about 5 cups of diced green tomatoes
1 thinly sliced large onion
2 pressed garlic cloves
Olive oil
½ tsp cumin
½ tsp salt
Flour or GF alternative

1. Slowly sauté onion and garlic in enough olive oil to just cover the bottom of the pan. Caramelize.

2. Mix diced tomatoes with flour, cumin and salt. Use just enough flour to faintly coat the tomatoes – this helps their juices to thicken a bit when baking. Think apple pie.

3. Add caramelized onions and garlic to tomatoes and mix again. Pour into a deep-dish baking pan; I used a 5 X 9 glass pan.

 
Biscuit
2 C Flour or GF alternative
1 Tbs baking powder
1 tsp sugar
1 tsp dill seed
1 tsp red pepper flakes
½ cup grated cheese
4 Tbs butter
¼ C milk

1. Combine and mix dry ingredients. Gently combine grated cheese so that the cheese is covered with the flour mixture. I used Havarti, but any softer cheese would work. Cut in the butter until it resembles coarse meal. Add just enough milk to blend dough.

2. Gently knead dough on a floured cutting board. Roll out and cut into your favorite shape. I used a heart just to remind my Doubters that I still love you!

Assemble & Bake

Place biscuits on top of the tomato filling. (If you have more cut biscuit dough than will fit, simply bake them on a cookie sheet for about 20 minutes.) Grate just a bit of cheese on top of the biscuits. Cook for 45-60 minutes at 375°.
